hungry tuesday - Grilled zucchini with goat cheese and pine nuts

grilled zucchini with goat cheese and pine nuts

approx. 4 servings

2 medium zucchinis
2 small goat cheese
1 handful of pine nuts

heat the oven up to 180ºC
slice or half the zucchinis and steam them for 10 to 15 minutes,
(trow them in boiling water if you don't have a steamer, but don't let them boil!)
cut thin slices of goat cheese or crumble it whit your hands.

place the zucchinis on a oven tray covered by a thin lair of olive oil,
cover with the goat cheese and sprinkle with some pepper (salt if the cheese isn't salted enough),
place in the oven close to the grill.
take care that the cheese melts but doesn't burn.

toss the pine nuts in a skillet and toast then until golden brown.

when both the pine nuts and the cheese are golden toss the pine nuts over the zucchinis and serve with a pasta or bulgar and a light salad.
